Sausage on a cabbage bed - Korv på vitkålsbädd

SAUSAGE ON A CABBAGE BED
Korv på vitkålsbädd

This is a German-inspired dish with cabbage and smoked sausage. Try making it with some sort of German or Polish kind of sausage and make sure to put mustard on the table – they go hand in hand!

4 servings

Approx 14 oz cabbage
3 spring onions
2 carrots
2 tablespoons oil
¼ cup raisins
3 tablespoons vinegar
1 tablespoon sugar
½ teaspoon salt
14 oz to 1 lb smoked sausage

Decoration:
chopped parsley

Shred the cabbage, chop the onions and thinly slice the carrots. Heat the oil in a saucepan. Sizzle cabbage, onions and carrots for about 5 minutes. Add raisins, vinegar, sugar and salt, put a lid on and simmer it all slowly for about 5 minutes.

Slice the sausage and blend it into the cabbage. Simmer slowly, still covered, for about 10 minutes. Put it on a serving plate, sprinkle with parsley and serve with mashed potatoes, mustard and a glass of beer.

Enjoy!

Bella
