PORK CHOPS WITH MUSHROOM MIX
Kotletter med svampröra

1 tablespoon butter or margarine
1/3 cup chopped parsley
¼ to 1/3 cup finely chopped
red onion
1 egg
1 teaspoon salt
black pepper
2 to 3 tablespoons grated cheese
Melt the fat in a frying pan and brown the pork chops
on both sides until slightly coloured. Transfer them to an oven-proof dish and
flavour with salt and pepper on both sides.

The lovely mushroom mix makes this simple pork chop
dish a feast. You can prepare it in advance and then put it in the oven before
serving.
4 servings
4 to 6 pork chops

Mushroom mix:
7 oz fresh mushrooms1 tablespoon butter or margarine
1/3 cup chopped parsley
¼ to 1/3 cup finely chopped
red onion
1 egg
1 teaspoon salt
black pepper
2 to 3 tablespoons grated cheese
Mushroom mix:
Cut the mushrooms in pieces. Sizzle it in the fat
until all the liquid has disappeared. Allow to cool. Blend together mushrooms,
parsley, red onion, egg, salt and pepper. Divide this on top of the pork chops.
Bake the chops in the middle of the oven at 175 °/350F for about 40 minutes. Sprinkle with cheese after about 30 minutes. Make sure the
pork chops are done, if not you continue baking for a few minutes more.
Serve with boiled potatoes, a green salad or sliced
tomatoes.
