CHICKEN IN A HOT SAUCE
Kyckling i het sås

Treat your friends to a great chicken dish. Peperoni makes the sauce hot, so be careful and taste your way!

1 chicken, approx 2 lbs, or 2 lbs chicken parts
1 tablespoon butter or margarine
1 tablespoon cooking oil
2 crushed garlic cloves
cayenne
salt, white pepper
¾ cup chicken bouillon
1 tablespoon Maizena
¾ cup heavy cream
3 tablespoons French mustard
3 tablespoons chopped pickled gherkin
1 to 2 tablespoons chopped peperoni
or other pepper fruit
1 teaspoon Chinese soy sauce

Cut the chicken in pieces. Melt the fat in a frying pot and sizzle garlic and cayenne for a minute or so. Put the chicken pieces in the pot and brown until coloured all around. Flavour with salt and pepper. Pour on 1/3 cup bouillon, put a lid on and fry the chicken until done, 25 to 30 minutes. Put the chicken on a serving dish and keep warm.

Stir the Maizena with remaining bouillon and beat it in together with cream, mustard, pickled gherkin, peperoni and soy sauce. Boil the sauce for about 5 minutes, beating occasionally. Flavour to taste with salt and pepper and pour the sauce over the chicken. Serve and enjoy!
