STRAWBERRY FOAM IN A SHELL
Jordgubbsskum i skal

Use fresh strawberries in the summer and frozen in the winter, and you can make this dessert whenever you feel like it. It’s great with a cup of coffee or tea.

Approx 8 servings

7 oz digestives, McVities are the best
4 oz melted butter or margarine

Filling:
2 cups fresh strawberries
or 1 package frozen, thawed berries, 8 oz
1/3 cup sugar
2 egg whites
1 cup heavy cream
1 teaspoon vanilla sugar


Crush the biscuits and mix them with melted fat. Press this out in the bottom and along the sides of a round baking pan, diameter approx 9 inches.

Trim the berries and reserve some for decoration. Mash remaining berries with a fork and blend in 2 tbsps sugar. Beat the egg whites until stiff and gradually beat in remaining sugar. Beat the cream until thick and flavour it with vanilla sugar. Gently turn in the egg whites and cream in the strawberry mash and blend well. Pour this in the pie shell and freeze the dessert for a few hours. Take it out 30 minutes to 1 hour before serving, so that the strawberry mash softens. Decorate with split strawberries and serve.
