BAKED PLUM COMPOTE
Bakad plommonkompott
2 tablespoons Maizena
½ teaspoon ground cinnamon
3½ oz butter or margarine
1 egg
1 cup flour
1½ teaspoon baking powder
1 teaspoon vanilla sugar
1/3 cup milk
plums
Pit the plums, slice them and put them in an
oven-proof dish. Mix 3/4 cup sugar, corn flour and cinnamon, sprinkle
this over the plums and blend. Divide a little of the fat in pieces on top and bake
the plums in the middle of the oven at 390F for 10 minutes.

I know, it’s not the season for plums now, but it
never hurts to be prepared! Just imagine, when your trees are weighed down with
that delicious fruit and you’ve already used all your faithful recipes, then
there’s this one to try! :-D
4 to 6 servings
10 to 12 plums
1 ¼ cup sugar2 tablespoons Maizena
½ teaspoon ground cinnamon
3½ oz butter or margarine
1 egg
1 cup flour
1½ teaspoon baking powder
1 teaspoon vanilla sugar
1/3 cup milk
Decoration:
powdered sugarplums
Stir remaining sugar with remaining fat and egg. Mix
flour, baking powder and vanilla sugar and stir this into the batter,
alternating with the milk. Pour the batter over the plums, put back in the
middle of the oven and bake at the same temp for 30 to 40 minutes or until the
batter has set.
Sift with powdered sugar, decorate with plums in
slices and serve, preferably with some whipped cream.
