DREAMY RASPBERRY DESSERT

¼ cup honey
2/3 cup cooking yogurt
2/3 cup heavy cream
mint or lemon balm leaves
Mash or purée the berries and “strain” them to get rid of the little hard things (I never do that because they don’t bother me).

This is something I often make for dessert at New
Year’s Eve – then I mostly use frozen raspberries because the fresh, imported ones are so … expensive. But it’s sooo
delicious! And since it’s not all cream, but half yogurt, the calories are
suitably reduced as well. A win-win situation!

12 oz fresh or frozen raspberries
+ some berries for decoration¼ cup honey
2/3 cup cooking yogurt
2/3 cup heavy cream
Decoration:
whole raspberriesmint or lemon balm leaves
Mash or purée the berries and “strain” them to get rid of the little hard things (I never do that because they don’t bother me).
Mix honey and yogurt and blend it well. Gently turn
in the raspberry purée and blend until colour and consistency is to your
liking. Beat the cream until stiff and add this to the yogurt-raspberry
mixture.
Spoon the dessert into 4 serving glasses or bowls
and decorate with berries and leaves as above. Serve instantly or cover with
plastic foil and chill for up to 8 hours. If you wish, you can sprinkle the
surface with chopped hazelnuts or almonds. You can also substitute the
raspberries with strawberries or blackberries.
