BEEFSTEAK MADEIRA WITH ONIONS
Madeirabiff med lök
3/4 cup bouillon
2 teaspoons arrowroot
3 to 4 tablespoons dry madeira wine
salt, pepper
Slice the onions and lightly brown in half the amount of fat. Remove when really tender and keep warm. Heat remaining fat in another frying pan and fry the steaks for about 5 minutes on each side. Take up the meat and whisk out the pan with bouillon, then thicken with the arrowroot stirred with some water. Flavour to taste with madeira wine and spices and, if you wish, put the meat back in the sauce to heat through when serving.
Madeirabiff med lök
A lightly thickened sauce made from the pan juices,
with a rather strong flavour of madeira wine, gives the finishing touch to this
meat dish. The meat has to be really tender for a good result.

1 1/3 lbs sliced beef, cut in approx 3/4 inch slices or to your liking3/4 cup bouillon

Put the onions in a ring on a warm serving dish, then
put the meat in the middle and pour the sauce over it.
Serve with fried potatoes or fries, a green salad and fried tomatoes. Green beans are also
good with this.
