Pork rolls with onion and sweet peppers - Fläskrulader med lök och paprika

PORK ROLLS WITH ONION AND SWEET PEPPERS
Fläskrulader med lök och paprika

If you use “cheaper” parts of the pig you can slice them and fry them like I do in this recipe. You can use different flavours – here I use rosemary, a good spice with pork. You can also use curry or celery salt.

4 servings

1 lb boneless pork, e.g. shoulder
1½ to 2 teaspoons salt
½ teaspoon white pepper
1½ teaspoon dried rosemary
butter or margarine
2 large onions
1 red bell pepper
1 ¼ cup bouillon
1½ tablespoon soy sauce


Flavour the meat with salt, pepper and rosemary. Roll them up and secure with a toothpick. Brown the rolls in some fat in  a frying pan and remove them. Peel and chop the onions. Rinse, trim and shred the pepper.

Sautée onions and sweet pepper in the frying pan and add bouillon and soy sauce. Put the meat back and then continue frying on low heat, covered, for about 20 minutes or until the meat is tender – try with a skewer. Remove the toothpicks before serving.

Serve with boiled potatoes, broccoli and a salad if you wish.
