FIBER SCONES
Fiberscones
1/3 cup oat bran (hope that’s right, the dictionary didn’t say)
2 tablespoons sugar
2 teaspoons baking powder
½ teaspoon salt
1 ¾ oz butter or margarine
2 beaten eggs
¼ cup soured milk or regular milk
1 tablespoon melted butter or margarine
Mix flour, wholemeal flour, oat bran, sugar, baking powder and salt in a bowl. Cut the fat in pieces and finely divide it in the flour mixture with a fork. Work the dough until crumbly. Mix eggs and soured milk and stir this into the dough. Work it together but not too long, or the scones will be tough.

Scones is a quick bread to make and it’s best fresh
from the oven. If you would find yourself with leftovers, you can warm them up
in the microwave with a very good result.

1 ¼ cups flour

Mix flour, wholemeal flour, oat bran, sugar, baking powder and salt in a bowl. Cut the fat in pieces and finely divide it in the flour mixture with a fork. Work the dough until crumbly. Mix eggs and soured milk and stir this into the dough. Work it together but not too long, or the scones will be tough.
Turn the dough out onto a floured surface and split it
in two. Shape each part into a round cake, 6 inches in diameter. Transfer them
to a greased baking plate, mark every cake in 4 parts and brush with melted
fat. Bake in the middle of the oven at 390F for about 15 minutes.
Allow the bread to cool slightly, break them apart and
serve them fresh from the oven.
