MOCHA MUFFINS
Moccamuffins
¼ cup brown sugar
2 teaspoons baking powder
2 teaspoons instant coffee
1 teaspoon ground cinnamon
1 teaspoon vanilla sugar
1 cup milk
3½ oz melted butter or margarine
1 egg
3½ oz chopped chocolate
1/3 cup flour
4 tablespoons brown sugar
½ teaspoon ground cinnamon
4 tablespoons butter or margarine
Mix flour, sugar, brown sugar, baking powder, cinnamon and vanilla sugar in a bowl. Mix together milk, melted fat and eggs. Stir the milk mixture into the dry ingredients. Chop the chocolate and blend it in.
Moccamuffins
Muffins can be varied into eternity and they’re
always delicious. These are given their taste from coffee and chopped
chocolate.
16 muffins
2 cups flour
2/3 cup sugar¼ cup brown sugar

1 teaspoon vanilla sugar
1 cup milk

Fill 16 muffin tins (I always use paper tins) to
approx ¾ level with the batter. Mix flour, brown sugar and cinnamon, Cut the fat in
pieces and chop it together to a crumbly mixture. Sprinkle this on top of the
muffins and bake in the middle of the oven at 390F for about 15 minutes.
Let the muffins cool on a rack and serve them
lukewarm or cold.
