CHICKEN AU GRATIN WITH BELL
PEPPERS AND ONIONS
Kycklinggratäng med paprika och lök
Serves 4
1.1 lb chicken breast fillets
butter for frying
salt, white pepper
1.2 cups cream
2 tablespoons mustard
½ meat bouillon cube
2 bell peppers, different colors
1 red onion
½ red chili fruit
4 servings boiled rice
Cut the chicken lengthwise and brown on all sides in butter. Sprinkle with salt and pepper. Transfer to an greased, oven-proof pan. Mix cream, mustard and crumbled bouillon cube in a saucepan. Simmer on low heat until the sauce thickens and pour it over the chicken. Cook in the oven at 392F until the chicken has an inner temperature of approx 160F for 25 to 35 minutes. Make sure that the chicken is only just done.
Sauté shredded bell pepper, sliced onion and finely chopped chili fruit. Flavor with salt. Take out the chicken and top it with the bell pepper mix. Serve with boiled rice, or potatoes if you like that better.
