CREAMY SALMON STEW WITH SPINACH
AND MUSHROOMS
Krämig laxgryta med spenat och svamp
Serves 4
Salmon stew:
1 lb salmon fillets, skin and boneless
8.8 oz mushrooms
2 tablespoons butter
1 teaspoon salt
some pepper
0.2 cup sherry or white wine
2 tablespoons lobster fond
1 cup heavy cream
1 cup milk
2 tablespoons flour
1.2 oz fresh baby spinach
For serving:
boiled rice or potatoes with dill
sugarsnaps
salad
Cut the fish in approx 3/4 inch cubes. Split the mushrooms. Fry fish and mushrooms in butter and flavor with salt and pepper. Transfer to a plate.
Boil sherry and fond for 2 minutes. Add cream and continue boiling, uncovered, for about 10 minutes. The sauce should reduce. Mix milk and flour and stir this into the sauce and simmer for a few minutes. Flavor to taste with salt and pepper.
Put salmon and mushrooms in the sauce and heat through. Add spinach.
Serve the stew with rice or boiled potatoes with dill, sugarsnaps and a salad.
