DOUBLE ALMOND COOKIES WITH ORANGE CRÈME
Dubbla mandelkakor med apelsinkräm

22 cookies

7 oz almonds
0.9 cup powdered sugar
4 egg whites

Crème:
0.4 cup regular milk
0.2 cup fresh orange juice
2 tablespoons Maizena cornstarch
2 tablespoons sugar
4 egg yolks
5½ oz butter
1 tablespoon vanilla sugar

Decoration:
dark chocolate


Preheat the oven to 390F.

Grind the almonds and mix with powdered sugar (I normally buy it already ground). Beat the egg whites to a stiff foam and turn the almond mixture gently into it. Blend to a batter. Drop out into cookies on a paper-lined baking plate, approx 1 teaspoon per cookie. Bake for about 10 minutes until lightly colored. Allow to cool on the baking paper.

Crème:
Mix milk, orange juice, cornstarch and sugar in a saucepan and heat while stirring until it thickens. Add egg yolks while beating and heat, stirring, until it thickens again. Remove saucepan from heat and allow to cool. Beat in the room-tempered butter in small dabs and last add vanilla sugar. Beat until fluffy. Put the cookies together two and two with the crème in between and decorate with melted, dark chocolate.
