FISH AU GRATIN WITH PIPED MASHED
POTATOES AND BACON
Fiskgratäng med spritsat potatismos och bacon
Serves 4
14 oz fillet of cod, fresh or frozen and thawed
1 teaspoon salt
some pepper
0.8 cup creme fraiche
1 fish bouillon cube
1 tablespoon tomato paste
0.4 cup cream of your choice
1 tablespoon flour
1 oz sundried tomatoes
0.8 cup grated cheese
4½ oz streaky bacon
your own recipe for mashed potatoes
Decoration:
chopped parsley
Preheat oven to 437F.
Prepare the mashed potatoes and pipe it out alongside the walls of a gratin dish. Put the fish in the middle of the dish and sprinkle with salt and pepper.
Mix creme fraiche, bouillon cube, tomato paste, cream and flour and bring this to a boil while stirring. Simmer the sauce for a few minutes until it thickens.
Cut the tomatoes in pieces and sprinkle them over the fish. Pour over the sauce and sprinkle with grated cheese. Put the dish in the oven an cook for about 20 minutes.
Shred and fry the bacon and sprinkle this over the gratin when ready. Decorate with parsley and serve with a tossed salad.
