Ground Meat Stew with Spicy Sausages - Köttfärsgryta med kryddiga korvar

GROUND MEAT STEW WITH SPICY SAUSAGES
Köttfärsgryta med kryddiga korvar

Serves 4

Stew:
3 spicy sausages of your choice
1 onion
2 garlic cloves
1 red and 1 yellow bell pepper
2 tablespoons olive oil
14 oz ground meat (I use beef + pork)
1 teaspoon paprika
1 teaspoon cumin
1 can cherry tomatoes, approx 14 oz
1 can crushed tomatoes, approx 14 oz
3 tablespoons tomato paste
3 tablespoons concentrated veal fond
0.4 cup water
1 can kidney beans, approx 14 oz
0.6 cup canned, drained corn (off the cob)
3 tablespoons finely chopped parsley

Lime herb yogurt:
1.2 cup Turkish yogurt, 10% fat
grated zest from ½ lime
fresh juice from ½ lime
0.2 cup finely chopped parsley
1 tablespoon runny honey

Decoration:
parsley


Slice the sausages. Peel and chop onion and garlic. Trim and dice the bell peppers. Sauté the onion until tender and glossy in oil in a frying pot. Add ground meat, sausages, garlic and bell peppers and sauté it all for a while. Add spices and blend well. Add cherry tomatoes, crushed tomatoes, veal fond and water. Cover with a lid and simmer over medium heat for 20 to 25 minutes.

Rinse the beans and drain them. Add beans and corn to the stew and boil for a few minutes more. Turn the parsley into the pot.

Lime herb yogurt:
Mix Turkish yogurt, lime zest and juice and parsley. Flavor to taste with salt and pepper. Drizzle with honey and decorate with parsley.

Serve with potato wedges, from potatoes or sweet potatoes.
