LEMON CAVES WITH LEMON CURD
Citrongrottor med lemon curd

45 cookies

0.4 cup powdered sugar
7 oz cold butter
0.4 cup potato starch
1.6 cups flour
0.4 cup lemon curd


Quickly blend the dough together in a food processor or work it by hand. Shape to a sausage. Slice it up, shape into small balls and put them on a paper lined baking plate. Make a thumbprint into each with a floured thumb and fill the hollow with 1 teaspoon lemon curd. Bake at 347F for 12 to 15 minutes and leave to cool on the baking plate.

Store these cookies in an airtight jar with baking paper in between the layers. Freeze and take up as many as you need.
