LEMON SUGAR CAKE WITH BLUEBERRIES
Citronsockerkaka med blåbär
1 cake, 14 pieces
Cake:
3½ oz butter
3 eggs
1.2 cup sugar
grated zest from 1 lemon
1 tablespoon fresh lemon juice
1.6 cups flour
2 teaspoons baking powder
1 teaspoon vanilla sugar
½ cup regular milk
0.6 cup blueberries
Decoration:
powdered sugar
shredded or grated zest from 1 lemon
Preheat oven to 347F.
Melt the butter and remove from heat. Beat eggs and sugar until fluffy and add lemon zest and juice. Mix flour, baking powder and vanilla sugar and sift this into the batter alternating with butter and milk.
Pour the batter in a greased, floured baking pan that takes 6 to 8 cups. Sprinkle with blueberries. Bake in the lower part of the oven for about 70 minutes and allow to cool. Sift with powdered sugar and decorate with grated lemon zest when serving.
