OVEN-BAKED GROUND MEAT TOMATO SOUP

Serves 4
14 oz ground meat, beef + pork
butter for frying
salt, pepper
some dried thyme
some dried oregano
1 onion
1 garlic clove
3.2 cups crushed tomatoes
3 tablespoons tomato ketchup
2 tablespoons tomato paste
2 cups veal or vegetable bouillon,
fond or cube
½ bunch chopped fresh thyme
4 small bunches cherry tomatoes
3½ oz grated cheese, a strong kind
Brown the ground meat in butter until it's crumbly. Flavor with salt, pepper and herbs and transfer to a pot. Peel and chop the onion and sauté together with grated garlic. Sprinkle with salt and pepper and add to the pot. Add crushed tomatoes, ketchup, tomato paste and dilute with bouillon. Let it all simmer for at least 10 minutes, uncovered. Stir occasionally.
Add most of the chopped thyme and flavor to taste if more is needed. Spoon up the soup in oven-proof serving dishes and top with some tomatoes in each. Sprinkle with grated cheese and bake in the oven at 437F until the cheese has melted and the tomatoes are tender, about 10 minutes. The time can vary, so keep a close check on it. Decorate with chopped thyme and serve with bread.
