PARMESAN CHICKEN AU GRATIN
Kycklinggratäng med krämigt parmesantäcke

Serves 4

1½ lbs chicken fillets
1 red onion
2 garlic cloves
0.8 cup creme fraiche
0.8 cup heavy cream
0.2 cup fresh basil
1 tablespoon chicken fond
salt, pepper
7 oz cherry tomatoes
0.4 cup grated Parmesan cheese

For serving:
small roast potatoes
salad


Preheat the oven to 390F.

Fry the chicken in a frying pan with butter, approx 3 minutes on each side. Transfer to an oven-proof pan. Peel and chop onion and garlic and sauté until soft in the frying pan used for the chicken. Add creme fraiche, cream, basil and chicken fond. Bring the sauce to a boil and boil for 5 minutes. Flavor to taste with salt and pepper.

Pour the sauce over the chicken and sprinkle with grated cheese. Put the tomatoes in the pan and Cook in the oven for 15 to 20 minutes until the chicken is done. Serve with roast potatoes and salad.
