SAUSAGE STEW WITH MUSHROOMS
Korvgryta med champinjoner
Serves 2
10½ oz mixed sausages, e.g.
salsiccia, kabanossen, kolbasz
or any spicy sausages you like
4½ oz mushrooms
½ onion
½ fennel
1 teaspoon butter
1 tablespoon mustard
1 tablespoon concentrated veal fond
0.4 cup water
0.4 cup cream
0.2 cup shredded leek
1 oz fresh baby spinach
Slice the sausages and split the mushrooms. Chop the onion and slice the fennel. Heat up the butter in a frying pan and fry sausages, mushrooms, onion and fennel for a few minutes. Add mustard, veal fond, water and cream. Simmer for about 10 minutes, then add leek and baby spinach and serve straight away.
