Almond Salmon with Orange Sauce and Winter Salad - Mandellax med apelsinsås och vintersallad

ALMOND SALMON WITH ORANGE SAUCE
AND WINTER SALAD
Mandellax med apelsinsås och vintersallad

Serves 6

2.2 lbs whole fillet of salmon
1 teaspoon salt
some pepper
3 tablespoons mustard
1 egg yolk
0.4 cup flaked almonds
3 tablespoons chopped leafy parsley

Orange sauce:
1.6 cups water and pan juices
1 vegetable bouillon cube
0.8 cup creme fraiche
3 tablespoons flour
grated zest from 1 orange
fresh juice from ½ orange
1 tablespoon chopped parsley
1 teaspoon salt

Winter salad:
7 oz fresh kale
3 red apples
fresh juice from 1 orange

Dressing:
2 tablespoons Swedish-type mustard
(normally sweet, strong and a bit roughly ground)
4 tablespoons oil
2 tablespoons white wine vinegar
1 teaspoon flaked salt
some black pepper


Cut the kale in small pieces and do the same with the apples, without peeling. Mix them with the orange juice. Blend together the dressing and pour it over the salad.

Place the fish in an oven-proof pan with salt and pepper. Mix mustard and egg yolk and spread on the fish. Mix Almond and parsley and sprinkle this on top. Cook in the oven at 437F to an inner temperature of 150F.

Mix all ingredients for the sauce and bring to a boil while stirring. Simmer for 5 minutes.

Serve with the sauce, salad, green peas and potatoes.
