Apple Turbo Sorbet - Äppelturbosorbet

APPLE TURBO SORBET
Äppelturbosorbet

Serves 4

3 green apples, e.g. Granny Smith
fresh juice from 1 lemon

Syrup:
0.8 cup water
0.6 cup sugar
2 tablespoons liquid glucose
1 tablespoon vanilla sugar

For serving:
raspberries
mint leaves


Rinse, split and core the apples. Leave them unpeeled for the sorbet to have a light green color. Cut the apples in thin slices and put them in a glass jar with a lid. Pour on the lemon juice, put in the freezer and leave for about 4 hours.

Bring water, sugar and glucose to a boil in a saucepan. Simmer while stirring until the sugar has melted. Allow to cool in a waterbath and add vanilla sugar.

Mix the frozen apple slices with the syrup in a food processor or mixer to a sorbet. Transfer back to the glass jar and put in the freezer, if the sorbet won't be served right away. Serve in nice serving glasses and decorate with raspberries and fresh mint.
