APPLE ALMOND SQUARES
Äppel- och mandelrutor

15 squares

Layer:
5½ oz butter
0.4 cup powdered sugar
1.6 cups flour
1 egg yolk

Filling:
14 oz almond paste
5½ oz butter
3 eggs
1 tablespoon vanilla sugar
3 apples
2 tablespoons sugar
1 teaspoon cinnamon

For serving:
vanilla sauce (I'm sure there's a 
recipe for this somewhere in the blog)


Preheat oven to 347F.

Mix room-tempered butter, powdered sugar and flour to a crumble. Add egg yolk and work to a dough. Roll it out and put it in a roasting pan, 12 x 8 inches, and put in a cold place for 30 minutes.

Filling:
Grate the almond paste and add dabs of room-tempered butter while stirring. Stir in one egg at a time, add vanilla sugar and pour the batter onto the pie dough in the pan. Core and wedge the apples and arrange them nicely over the surface. Mix sugar and cinnamon and sprinkle this on top. Bake until the batter has set and is nicely colored, approx 40 minutes. Serve with vanilla sauce, or whipped cream or vanilla ice cream, or sour cream, or whatever!
