BLUE CHEESE-FILLED PATTIES WITH
MUSHROOM SAUCE

Serves 4
Filled ground meat patties:
1.1 lb ground beef
1 egg
1 teaspoon salt
some black pepper
2½ oz blue cheese or chèvre
2 tablespoons butter
Mushroom sauce:
9 oz mushrooms of your choice
2 tablespoons butter
2 tablespoons flour
1.2 cups pan juices and water
2 tablespoons concentrated veal fond
0.4 cup cream
1 tablespoon Diijon mustard
2 teaspoons Chinese soy sauce
½ teaspoon salt
some pepper
Mix ground beef, egg, salt and pepper and shape into 8 to 12 patties. Push a piece of blue cheese or chèvre into each and fry them in butter until nicely colored, about 10 minutes.
Quart the mushrooms (if they're large) and fry them in butter. Sift with flour and blend it in. Add remaining sauce ingredients and bring to a boil while stirring. Pour the sauce over the patties and heat through.
Serve with potatoes in the oven and green beans.
