CARROT SOUP WITH FETA CRÈME
Morotssoppa med fetaostkräm
Serves 4
4 potatoes
1.1 lb carrots
1 chopped onion
1 finely chopped garlic clove
2 tablespoons oil
4 cups water
2 vegetable bouillon cubes
1 teaspoon salt
some pepper
Feta crème:
5½ oz feta cheese
0.8 cup creme fraiche
Peel potatoes, carrots, onion and garlic. Dice the potatoes and thinly slice carrots, onion and garlic. Sauté onion and garlic in oil until tender but not coloring. Add potatoes and carrots and continue cooking. Add water, bouillon cubes, salt and pepper and simmer for about 10 minutes.
Mix together the feta crème.
Mix the soup until smooth and drizzle the cheese crème over the surface when serving. Sprinkle with chopped parsley.
