CHEESECAKE PIE WITH ELDERBERRY
AND STRAWBERRIES
Cheesecakepaj med fläder och jordgubbar

1 pie, 10 pieces

Layer:
2½ oz almond flour
1 finely grated bitter almond
1 egg
4½ oz cold butter
0.2 cup sugar
1½ cups flour

Filling:
4 gelatin sheets or 2 teaspoons
powdered gelatin
zest and juice from ½ lemon
0.4 cup concentrated elderberry drink
9 oz quark, unflavored
10½ oz cream cheese
1 tablespoon powdered sugar

Elderberry "mirror":
0.8 cup concentrated elderberry drink
4 gelatin sheets or 2 teaspoons
powdered gelatin

Decoration:
4 cups fresh strawberries


Quickly blend the dough together in a food processor. Place it in a springform pan, diameter about 9 to 10 inches. Put in the fridge for about 30 minutes, prick with a fork and bake in the middle of the oven at 350F for 15 to 20 minutes. Allow to cool.

Filling:
Soak the gelatin sheets in cold water for at least 5 minutes, or do as you always do with the powdered gelatin. Heat up the lemon juice and remove from heat. Squeeze the gelatin sheets and add them, then stir until everything is melted and add the elderberry drink. Allow the gelatin mixture set to a syrupy liquid. Stir the room-tempered quark, well mixed with the cream cheese, into the gelatin and flavor to taste with powdered sugar or more elderberry. Pour the filling into the pie crust and leave in the fridge to set for at least 2 hours.

Elderberry "mirror":
Soak the gelatin sheets as described above. Heat up half of the elderberry drink for the mirror and stir in the gelatin. Add remaining drink and cool until syrupy. Pour this over the filling and leave to set in the fridge. Decorate with strawberries and elderflowers.
