CHICKEN IN PEANUT SAUCE
Kyckling i jordnötssås
Serves 2
9 oz chicken fillets
2 tablespoons peanut butter
½ teaspoon red curry paste
fresh juice from ½ lime
1 teaspoon brown sugar
0.2 cup water
0.4 cup cooking cream
1 teaspoon chicken fond
1 garlic clove
½ apple
1 carrot
salt, pepper
For serving:
boiled rice
Shred the chicken. Beat together peanut butter, red curry paste, lime juice, sugar, water, cream and chicken fond in a pot and bring to a boil. Core the apple and cut in shreds. Peel and shred the carrot.
Brown the chicken in oil in a frying pan. Put in the chicken together with apple, carrot and crushed garlic. Boil for a few minutes and flavor to taste with salt and pepper.
Serve with boiled rice.
