CHICKEN IN SUMMER SAUCE
Kyckling i sommarsås
Serves 2
2 chicken fillets
1 tablespoon butter or margarine
0.8 cup cream
1 tablespoon chicken fond
1 garlic clove
2 tablespoons French mustard
2 tablespoons chopped chives
1 piece, approx 2 inches, fresh
sliced cucumber
2½ oz bacon, fried crisp
Split each chicken fillet lengthwise. Brown on all sides in the fat and add cream, chicken fond, crushed garlic and mustard. Boil for 10 minutes. Sprinkle with chives and flavor to taste with salt and pepper. Decorate with sliced cucumber and crisp bacon and serve with boiled potatoes.
