Cheese Baked Potatoes with Warm Bean Salsa - Ostgratinerad potatis med varm bönsalsa

CHEESE BAKED POTATOES WITH
WARM BEAN SALSA
Ostgratinerad potatis med varm bönsalsa

Serves 4

1.2 lbs potatoes
½ tablespoon olive oil
1 teaspoon salt
5½ oz grated, strong cheese
1 teaspoon paprika
½ teaspoon cayenne

Warm bean salsa:
1 onion
1 garlic clove
1 teaspoon dried thyme
½ tablespoon olive oil
14 oz whole canned tomatoes
1 tablespoon white wine vinegar
2 teaspoons sugar
14 oz canned white beans, like cannellini beans


Preheat oven to 435F.

Split the potatoes lengthwise and put them on a paper-lined baking plate. Drizzle with olive oil and sprinkle with salt. Roast in the middle of the oven for about 25 minutes until tender. Sprinkle with grated cheese, paprika and cayenne and bake until the cheese has melted and the surface is golden, approx 5 to 10 minutes.

Sauté onions, garlic and thyme in a saucepan with oil. Add tomatoes, vinegar and sugar and simmer for about 15 minutes. Add the beans and heat through. Serve the bean salsa with the potatoes.
