CINNAMON PLUM CAKE
Plommonkaka med kanel

A juicy fruit cake with the lovely taste of cinnamon. If you want some extra luxury you can serve it with custard.

1 cake, 8 to 10 pieces

Approx 10½ oz plums
3½ oz butter
0.8 cup sugar
2 eggs
1.2 cups flour
1 teaspoon baking powder
1½ teaspoon vanilla sugar
0.4 cup regular milk
½ tablespoon cinnamon
2 tablespoons sugar


Heat the oven to 347F.

Grease and flour a springform pan, diameter approx 9 inches. Remove the stones and cut the plums in wedges.

Beat the room-tempered butter fluffy with the sugar. Add eggs, one by one, and stir until smooth. Mix flour, baking powder and vanilla sugar and stir this into the batter, alternating with the milk. Pour in the pan. Add the plum wedges (press them down slightly) and sprinkle with cinnamon and sugar. Bake in the middle of the oven for about 1 hour. Try with a stick that should come out dry.

Serve with custard if you so wish.
