CLEMENTINE SOUP
Clementinsoppa
Serves 4
4 cups clementine juice
fresh juice from ½ lemon
0.2 cup sugar
1 vanilla pod
2 tablespoons corn starch
For serving:
chocolate ice cream
fresh berries
dark chocolate
Bring clementine juice, lemon juice, sugar and seeds from the vanilla pod to a boil and simmer until the sugar has melted. Flavor with more sugar if necessary. Stir the corn starch with some cold water and beat this thickening into the soup. Simmer slowly for about 10 minutes and allow to cool.
Serve the soup with ice cream and berries and sprinkle with grated dark chocolate.
