DILL CHICKEN
Dillkyckling
Serves 4
1½ lbs chicken thigh fillets
1 onion
3 carrots
1.6 cups water
2 tablespoons chicken fond
2 bay leaves
0.8 cup heavy cream
1 to 2 tablespoons Maizena corn starch
salt, pepper
2 tablespoons sugar
2 tablespoons pickling vinegar, 12%
0.4 cup chopped dill
Cut each fillet in 3 pieces. Peel and chop the onion, peel and slice the carrots. Bring water, chicken fond and bay leaves to a boil and add chicken, onion and carrots. Bring to boiling point, skim and simmer for 15 minutes. Add cream and bring to boiling point. Thicken with Maizena and water and flavor with salt and pepper, sugar and vinegar.
Serve with boiled potatoes.
