FETA CHEESE MEAT LOAF

Serves 4
3 small bell peppers, mixed colors
1 onion
1 tablespoon cream
1 egg
1 tablespoon tomato paste
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh oregano
1 lb ground meat (beef + pork)
salt, black pepper
5.2 oz feta cheese
½ can sundried tomatoes, approx 1.7 oz
8.8 oz cherry tomatoes "on the twig"
Decoration:
fresh thyme and oregano
For serving:
green salad
Dice the bell peppers and chop the onion. Mix cream, egg, tomato paste and the fresh herbs in a bowl. Add ground meat, salt and pepper to a smooth mixture, and crumble in the feta cheese and sundried tomatoes. Shape the meat to a loaf and put it on a baking plate (greased or paper lined) with the tomatoes around.
Bake in the oven at 347F for 30 to 40 minutes. Decorate with fresh herbs and serve with a green salad.
