CHEESE AND KALE SOUP
Ostsoppa med grönkål
Serves 4
3 tablespoons butter
1.7 oz shredded fresh kale
4 tablespoons flour
2 cups regular milk
2 cups water
0.4 cup cream
2 vegetable bouillon cubes
1.6 cups ripe, grated cheese
½ teaspoon salt
some white pepper
Melt the butter in a large saucepan. Lightly sauté the kale, stir in the flour and beat in the milk. Continue stirring while bringing to a boil. Dilute with water and add cream and bouillon cubes. Cover and simmer for 10 minutes. Add cheese and flavor to taste with salt and pepper.
Serve with bread.
