CHICKEN STEW WITH MUSHROOMS
AND BRUSSELS SPROUTS
Kycklinggryta med svamp och brysselkål
Serves 6
3 lbs chicken thigh fillets
2 tablespoons Chinese soy sauce
2 onions
14 oz fresh mushrooms
2 tablespoons butter
1½ teaspoons salt
some white pepper
2 tablespoons grated fresh ginger
2 cups water
5 tablespoons concentrated veal fond
3 tablespoons redcurrant jelly
1 teaspoon sambal oelek
1 cup cream
4 tablespoons flour
1 shredded red bell pepper
Shred the chicken meat and mix with soy sauce. Peel and chop the onion, clean and split the mushrooms. Fry chicken, mushrooms and onions in butter, little by little. Flavor with salt and pepper and transfer to a pot. Add ginger, water and fond and simmer for 7 to 8 minutes. Stir in redcurrant jelly, sambal oelek and cream mixed with flour and simmer for 5 minutes. Shred the bell pepper and stir it in.
Serve with potatoes, Brussels sprouts with roasted hazelnuts, salad and more redcurrant jelly if you wish, or blackcurrant jelly. Swedes are fond of that little sweetness in certain types of food.
