KASSLER WITH VEGETABLES AND COCONUT MILK
Kassler med grönsaker i kokosmjölk

Serves 4

14 oz kassler (warm-smoked,
boneless loin of pork)
2 tablespoons butter

Sauce:
1 shredded leek
3 sliced carrots
1 tablespoon oil
2 yellow bell peppers, chopped
7 oz cherry tomatoes
1 can coconut milk, 1,6 cups
2 tablespoons red curry paste
1 teaspoon salt

For serving:
red lentils


Sauce:
Fry leek and carrots, add bell peppers and tomatoes and sauté for a while. Pour on the coconut milk, red curry paste, salt and pepper and simmer a couple of minutes. Flavor to taste with some lime juice if you wish.

Slice and fry the meat and serve it with the sauce and with or without red lentils.
