FILLET OF PORK WITH MUSHROOMS AND BACON
Svamp- och bacongratinerad fläskfilé
Serves 4
1 fillet of pork, approx 1 lb
2 tablespoons butter
salt, pepper
Mushroom stew:
8.8 oz mushrooms
2 tablespoons butter
4 tablespoons flour
1.2 cups cream
0.8 cup water
2 tablespoons concentrated veal fond
2 tablespoons Chinese soy sauce
salt, pepper
your own recipe for mashed potatoes
For baking:
5 oz streaky bacon
3½ oz blue cheese
cherry tomatoes
Prepare your own mashed potatoes.
Trim the meat and cut off excess fat and sinews. Fry it whole until golden brown in a frying pan with butter for about 20 minutes, so that it's almost done. Flavor with salt and pepper. Slice the mushrooms and fry them in butter. Sift with flour and blend it in. Pour in cream, water, veal fond and soy sauce and simmer the stew for 5 minutes. Flavor to taste with salt and pepper.
Fry the bacon and crumble the blue cheese. Slice the fillet approx 1/4 inch thick and put them in an oven-proof pan. Pipe the mashed potatoes around the sides and sift paprika over the potatoes.
Spread the mushroom stew over the meat (if there's any left you can serve it as extra sauce) and sprinkle with bacon and cheese. Decorate with cherry tomatoes and bake in the oven at 437F for about 10 minutes.
Serve with broccoli.
