FISH AND VEGETABLE STEW
Fiskgryta med grönsaker
Serves 4
1 onion
3 carrots
1 tablespoon oil
1 can sieved tomatoes, 14 oz
1 fish bouillon cube
1 teaspoon salt
some lemon pepper
1 small leek
14 oz fillet of cod or other white fish
7 oz small red tomatoes
2 tablespoons chopped dill
Slice and sauté onion and carrots in a saucepan. Add tomatoes, bouillon cube, salt and pepper. Bring to a boil and simmer for 10 minutes. Clean and slice the leek and cut the fish roughly in pieces. Add leek and fish to the saucepanc, cover and simmer for a few minutes until the fish is done. Sprinkle with tomatoes and dill and serve with e.g. boiled rice.
