FISH AU GRATIN WITH CHEESE AND TOMATOES
Ostgratinerad fiskgratäng med tomat
Serves 4
1 lb 12 oz fillet of cod
1 teaspoon salt
some pepper
3 tablespoons French mustard
2 tablespoons finely chopped
fresh dill
or 1 tablespoon dried dill
1 fennel stand
1 tablespoon butter
9 oz cherry tomatoes
0.8 cup cream
1 crumbled fish bouillon cube
0.4 cup grated cheese
Preheat oven to 437F.
Cut the fish in pieces and place in an oven-proof pan. Sprinkle with salt and pepper. Spread with mustard and sprinkle with dill. Shred and fry the fennel in butter until tender. Place fennel and tomatoes around the fish.
Mix cream and bouillon cube and pour in the pan. Sprinkle with grated cheese and cook in the oven for about 25 minutes. Decorate with fresh dill and serve with e.g. boiled potatoes and green beans.
