FISH WITH CITRUS SAUCE AND BROCCOLI
Fisk med citrussås och broccoli
Serves 4
4 "heads" romaine lettuce
1½ lbs fillet of cod or other white fish fillet,
preferably in a block
1 teaspoon salt
some pepper
1 orange
1 lemon
1 lime
3½ oz butter
2 broccoli
0.4 cup pesto
0.4 cup roughly chopped walnuts
Part the broccoli into florets and boil for 7 minutes in salted water. Drain and mix with pesto and walnuts. Keep warm as it's to be served hot.
Part the lettuce and put the leaves in boiling water until tender. Rinse them in cold water. Cut the fish in 4 pieces and sprinkle with salt and pepper. Put a large salad leaf, or two smaller sort of overlapping each other, on a carving board and wrap a piece of fish in it. Do the same with the rest and transfer to an oven-proof dish.
Squeeze the citrus fruits and melt the fat. Mix and flavor to taste with salt, then pour over the fish. Cook in the oven at 437F for about 15 minutes.
Serve with the broccoli.
