JUICY VANILLA-FILLED MANOR CAKE
Saftig herrgårdskaka med vaniljfyllning
1 cake, 10 pieces
Cake:
3 eggs
1.2 cup sugar
1.2 cup flour
2 teaspoons baking powder
0.4 cup boiling water
Vanilla filling:
4½ oz butter
0.4 cup regular milk
1 tablespoon sugar
1 vanilla pod
Decoration:
powdered sugar
Preheat oven to 347F.
Beat eggs and sugar until fluffy. Mix flour and baking powder and add this to the batter alternating with the hot water. Pour the batter in a greased, floured springform pan, diameter 9 to 10 inches, and bake in the lower part of the oven for about 30 minutes. Allow to cool.
Filling:
Melt the butter and add milk and sugar. Split the vanilla pod lengthwise and scrape out the seeds. Add seeds and pod in the saucepan and boil for a few minutes while beating.
Split the cake in 2 layers. Divide the vanilla filling on one layer and put the other one on top. Sift with powdered sugar before serving.
