FRIED SALMON WITH VEGETABLES
AND DILL CRÈME
Stekt lax med grönsaker och dillkräm
Serves 4
1.1 lb salmon fillets
2 tablespoons butter
1 teaspoon salt
some pepper
1.7 oz hazelnuts
4 tomatoes
½ chopped onion
2 tablespoons chopped parsley
Dill crème:
0.8 cup creme fraiche
1 vegetable bouillon cube
0.4 cup water
1 tablespoon chopped dill
some salt
some pepper
1 teaspoon lime juice
For serving:
1 head cauliflower
1 broccoli
Cut the fish in serving-sized pieces and fry them in butter. Flavor with salt and pepper. Roughly chop the hazelnuts and roast them in the frying pan. Dice the tomatoes and mix with onion and parsley.
Stir the dill crème together in a saucepan and bring to a boil.
Serve the salmon with the sauce, boiled cauliflower and broccoli and the tomato mix. Sprinkle with nuts.
