ROAST BEEF STROGANOFF
Biff Stroganoff på rostbiff
Serves 4
1.1 lb roast beef
1 onion
3 tablespoons butter
1 teaspoon salt
some pepper
9 oz sliced mushrooms
Sauce:
0.8 cup vegetable bouillon
+ juice from the pan
2 teaspoons Chinese soy sauce
1 tablespoon Dijon mustard
1 teaspoon lemon juice
1 tablespoon tomato paste
0.8 cup creme fraiche
2½ tablespoons flour
Decoration:
1 tablespoon chopped parsley
Shred the meat. Peel and chop the onion. Fry the meat in a frying pan with butter and add salt and pepper. Rinse the pan with some water and reserve it. Fry onion and mushrooms in butter and set aside.
Mix meat, onion and mushrooms and dilute with bouillon and juice from the pan. Bring to a boil and add soy sauce, mustard, lemon juice, tomato paste and creme fraiche mixed with flour. Simmer the stew for 10 minutes. Sprinkle with chopped parsley.
Serve with boiled rice, pickled gherkin and green beans.
