BROCCOLI POTATO SOUP
Broccolisoppa med potatis
Serves 4
4 potatoes
3.6 cups vegetable bouillon
14 oz frozen broccoli
1.6 cups regular milk
0.4 cup cream
2 tablespoons flour
½ teaspoon salt
some pepper
3 tablespoons chopped parsley
For serving:
bread
1.7 oz roasted sunflower seeds
Peel and thinly slice the potatoes. Bring the bouillon to a boil and add potatoes and broccoli to boil for about 8 minutes until everything is tender. Mix the soup until smooth with a hand mixer. Add milk and cream mixed with flour and bring to a boil while stirring. Flavor the soup to taste with salt and pepper and sprinkle with parsley.
Serve the soup with sunflower seeds and bread.
