GROUND BEEF PATTIES WITH BELL
PEPPERS AND BACON

Serves 4
0.3 cup oats
1 tablespoon potato starch
0.4 cup water
1 lb ground beef
1 egg
1 teaspoon salt
some white pepper
1 teaspoon paprika
7 oz canned grilled bell peppers
or sundried tomatoes
1 bunch fresh oregano
5 oz streaky bacon
2 tablespoons butter
Cream sauce:
1.2 cups pan juices
2 tablespoons concentrated veal fond
0.4 cup cream
2 tablespoons flour
1 tablespoon Chinese soy sauce
½ teaspoon salt
some pepper
Mix oats, potato starch and water and thicken for about 10 minutes. Add ground beef, egg, salt, pepper and paprika and blend well. Shape into 8 patties and fill them with canned bell peppers and chopped oregano. Wrap each one in sliced bacon. Fry in butter until nicely colored, about 10 minutes.
Mix all ingredients for the sauce in a saucepan and bring to a boil while stirring. Simmer for 5 minutes, pour the sauce over the patties and heat through.
Serve with oven-baked potato wedges and boiled broccoli.
