GROUND MEAT CURRY SOUP WITH APPLES
Currydoftande köttfärssoppa med äpple
Serves 1
5½ oz ground beef
½ onion, finely chopped
1 small grated garlic clove
½ diced apple
½ tablespoon butter
1 teaspoon curry
1 cup water
1 tablespoon veal fond
1 tablespoon tomato paste
1/3 can crushed tomatoes (out of 1 can of 14 oz)
1 tablespoon fresh lemon juice
salt, pepper
For serving:
1 tablespoon creme fraiche
1 tablespoon chopped apple
dried thyme
bread
Fry ground meat, onion, garlic and apple in the butter for a few minutes, add curry and continue cooking for a while. Add water, veal fond, tomato paste, crushed tomatoes and lemon juice. Simmer slowly for about 10 minutes and flavor to taste with salt and pepper.
Serve the soup in bowls and top with some creme fraiche, chopped apple and a pinch of thyme plus bread (you don't top the soup with the bread though ...).
