CHEESE AND HAM-FILLED BEEF
WITH MASHED POTATOES
Ost- och skinkfylld lövbiff med gott mos

Serves 4

8 thin slices of beef, "minute steaks"
butter for frying
2 tablespoons Dijon mustard
8 slices smoked ham
8 slices ripe cheese
butter for frying
salt, pepper
0.8 cup veal bouillon
chopped parsley

Pickled onions:
1 red onion
0.4 cup pickling vinegar, 12%
0.4 cup sugar
0.6 cup water

your usual recipe for mashed potatoes

For serving:
boiled carrots


Pickled onions:
Peel and thinly slice the red onion. Bring pickling vinegar, sugar and water to a boil in a saucepan, remove from heat and put in the onion. Set aside.

Prepare your mashed potatoes.

Place the minute steaks on a carving board. Spread with mustard. Put 1 slice of ham and 1 slice of cheese on each steak and fold up. Sprinkle with salt and pepper. Heat some butter in a frying pan and when it starts to turn brown, you put in the steaks and fry for about 1 minute on each side.

Take up the meat and pour the bouillon in the pan and boil for a while.

Serve with boiled carrots, pickled onions, mashed potatoes, the pan juices and some chopped parsley on top.
