Chicken Au Gratin with Cream Cheese and Bell Peppers - Krämig kycklinggratäng med färskost och paprika

CHICKEN AU GRATIN WITH CREAM CHEESE
AND BELL PEPPERS
Krämig kycklinggratäng med färskost och paprika

Serves 4

4 chicken breast fillets,
approx 1 lb 5 oz
3½ oz cream cheese, preferably
garlic and herbs
5 oz streaky bacon
2 shallots
1 garlic clove
1 red and 1 yellow bell pepper
salt, pepper
1 lb 8 oz sweet potatoes
butter for frying

Sauce:
1.2 cup heavy cream
2 tablespoons French mustard
1.2 cup chopped fresh herbs,
e.g. parsley and thyme


Preheat oven to 392F.

Make a cut lengthwise in the chicken fillets. Stuff cream cheese in the cuts and wrap the fillets in bacon. Brown in some fat in a frying pan until nicely colored.

Peel and chop the shallots, finely chop the garlic and shred the bell peppers. Fry lightly in some butter, sprinkle with salt and pepper. Peel and slice the sweet potatoes. Spread it out in the bottom of a greased, oven-proof pan. Sprinkle some salt and pepper between the layers. Top with half of the bell pepper mix and put the chicken on top. Top with remaining bell pepper mix.

Sauce:
Blend the ingredients for the sauce and pour this in the pan. Cook in the oven until the chicken is done (it should have an inner temperature of 158F). Takes about 25 minutes.

Top with some fresh herbs.
