COD IN A PAN WITH CREAMY WINE SAUCE
Torsk i panna med krämig vinsås
Serves 4
1 lb 5 oz fillet of cod in 4 pieces
salt, white pepper
oil for frying
1 large red onion
2 fresh thyme sprigs
2 bay leaves
6 small tomatoes
0.4 cup white wine
0.8 cup fish bouillon
1.2 cups cream
For serving:
green peas
riced or boiled potatoes
Flavor the fish with salt and pepper. Heat some oil in a frying pan and fry the fish until slightly colored on one side. Take it up and transfer to a plate.
Peel and quart the onion and put in the pan together with thyme, bay leaves and tomatoes. Add wine, bouillon and cream and boil for 15 to 20 minutes. Flavor to taste with salt and pepper. Add the fish to the pan and simmer slowly in the sauce for 3 to 4 minutes.
Serve with green peas and riced or boiled potatoes.
