GROUND MEAT PATTIES WITH CHANTARELLES
AND CREAM SAUCE

Serves 4
0.4 cup oats
1 tablespoon potato starch
0.3 cup water
1 lb ground meat (beef + pork
or beef alone)
1 egg
1 teaspoon salt
some pepper
1 teaspoon dried thyme
2 tablespoons butter
Sauce:
0.8 cup cream
0.8 cup water
2 tablespoons flour
2 tablespoons concentrated veal fond
1 tablespoon Chinese soy sauce
Topping:
3½ oz cream cheese with chantarelles
fresh thyme
Mix oats, water, potato starch and water and leave to swell for 10 minutes. Mix with ground meat, egg, salt, pepper and thyme and shape into 8 patties. Fry in butter until done, approx 3 minutes on each side.
Bring cream, water, flour, veal fond and soy sauce in a saucepan while stirring. Simmer for 5 minutes. Flavor to taste with salt and pepper. Pour the sauce around the patties in the pan. Top with chantarelle cream cheese and fresh thyme and serve with mashed potatoes, broccoli (or some other boiled vegetables) and lingonberry jam.
